By using a tortilla press to flatten the dough, it the texture any different that if you were to use a pasta roller. Sounds like it would save a lot of time and mess.

I use a cleaver to flatten my dough. It takes practice, but a smack, a hard press, followed by a slight drag nets consistant results...and it's quick. One tool to portion, press and generally handle.

We have a hand made tortilla press that we use with acetate on both sides of the dough. It has given best results so far and it is very efficient to.
