These are the tools that I use during service for plating food. They are practical, efficient and avoid the contact of the hands with the food. From left to right medical tools , tweezer, Global spoon, and offset spatula.

The tool on the far left looks handy for unmolding things or seperating mini tarts from their pans
I use my offset, a pair of global pincet and just a plain old spoons that I keep on the line in hot water

What are those medical tools, and what do you use them for? Why is the Global spoon better than other spoon shapes?

I think that the global spoon would give a nice long quinelle rather than a more egg shaped one from another spoon with a deeper and wider bowl
