I love freshly smoked fish, especially oily fish like salmon. On of my favorite combination is an oily white fish like cod, marinated with a light miso and then smoked gently, and then served with embers still coming out of a pieces of newly wrapped smoking wood. It's a spectacle for the diners in many senses.
